It’s officially summer and farms, home gardens, and even pots on windowsills are producing fruits, vegetables, and fresh herbs. This breakfast bowl was inspired by the early summer harvest - tiny new potatoes, endless zucchini, homegrown garlic, sun-ripened tomatoes, and, of course, fresh basil. Because fresh basil belongs on everything!
This is an easily adaptable recipe, you can substitute whatever vegetables look fresh and delicious from the farmer’s market and top with a fried (or poached or scrambled) organic egg. Depending on the day you could spice it up with some red pepper flakes or even a little locally-made hot sauce. Enjoy the early summer bounty for breakfast, brunch, or even a simple weeknight dinner.

Other favorite fresca combinations: Honeydew mint, cantaloupe basil, and strawberry blueberry (with a squeeze of lime). The possibilities are endless!
It's hard to be a vegetarian at most summer BBQs. We're told to bring along our own veggie burgers and the frozen brands are often filled with unpronounceable ingredients and don't even taste like much at all. Enter homemade veggie burgers. They're delicious, nutritious, and will even impress your carnivorous friends. These burgers are vegan - cooked sweet potato and rolled oats work to keep them from falling apart, and once cooked you can easily re-heat them on the grill for those perfect char marks.
